I bought BF 1943 a bit ago on PS3, and I know my EA account is connected to my PSN account, so how do I unlock the dog tag associated with that game?

Answer: Try logging into your EA account and making sure that you have bf 1943 added to your games, it does not update instantly, I had to wait two weeks for my N7 dog tag from mass effect to show up.
